It's Father's Day and we are pretty settled in Japan. We are borrowing some kitchen supplies and almost all of our furniture. But that doesn't stop us from making some yummy things including oatmeal and date sandwich cookies, or these banana pancakes or banana chocolate chip pancakes. "Making banana pancakes" always makes me think of high school and listening to the Jack Johnson CD as a family on the way to school, anyone else... just me?
Oh, and the dad in our family appreciated a yummy breakfast! Yay! (We also went to the pool together today, and found a kid Spiderman bike for the three year old with dad's expert eye).

Banana Pancakes (optional add Chocolate Chips)
Ingredients
1 1/2 cups All Purpose Flour
3 tsp Baking Powder
1 tsp Salt
1 1/2 tbsp White Sugar
1 cup Milk
1 Egg
1 Banana (ripe)
1 tsp Vanilla Bean Paste
1/4-1/2 cup Chocolate Chips (we used Semi-Sweet)
Directions
Whisk together flour, baking powder, salt.
Melt the butter, and set aside.
Make a well, add egg, milk, sugar, and vanilla bean paste (optional).
Add butter, and mashed banana.
Add chocolate chips if desired (we used semi-sweet).
Heat lightly oiled pan to medium heat. Add 1/3 to 1/2 cup of batter for each pancake. Wait until the tops are matte and not shiny before flipping. Serve hot (especially yummy with maple syrup)!
Oh, and this recipe can be easily doubled - that's what we do so we can freeze the pancakes a couple to a bag and have easy yummy breakfast in the future - just reheat in the microwave, oven, toaster oven or air fryer.
